You're fighting a ghostly pickle factory workerIn life, this guy endlessly walked the halls of the pickle factory, soulless and without direction. Then occasionally his boss would make him make some pickles.
In death, he does approximately the same thing, except his boss is long gone.

He rears back to hit you with a ghostly pickle, but then a ghostly whistle blows, and he starts running for the exit. (FUMBLE!)
