I can't speak for The cake's case, but that would make it a pretty damn old phrase. I'd have thought it started with the Borscht Belt comedians, putting such Yiddishisms into English. Those date to, what, the 1940s? The article on shm-reduplication at wikipedia does not estimate a date, but does cite a 1952 reference. My grandma was safely in her forties by then. This does remind me of the game "Pantsylvania", which is safely older than KoL. So a reference argument could be made based on is a computer game, has "Fancy Pants" in it in many ways, has cooking in it. But I can't say for certain it's got "fancy schmancy", and in the Chez Cheese kitchens, I don't remember any cheese sauces.
